Some days just blow all of your best laid plans out of the water. Like when you come home to find out your hyper, bored, unemployed husband has eaten half the fridge and thrown the other half away. And “fixed” the printer so it doesn’t work any more. And shrunk half your clothes in the laundry. And…and….so many other things.

Our budget is very tight some weeks, and this week was one of them. I was trying to use up what we had in the fridge and planned my meals around it. But between the hubby and the ravenous teenager, I’ve had to improvise quite a bit lately.

I got home last night with a pounding headache, after troubleshooting Cisco routers all day with no breaks and no lunch. I had planned to make 5-way chili and post it sometime soon, but realized we no longer had all the “stuff” to make that. Sigh. Continue reading →

Homemade Breakfast Pizza

Pizza and breakfast. Pizza for breakfast. Is there anything better? I’m not sure.

At my last job, we had a “Breakfast Club” where everyone would take turns bringing in breakfast on Fridays. This was fun, because everyone had different favorites and brought in whatever they liked. Some did homemade meals, others brought in bagels from Panera or Krispy Kreme doughnuts or even Bob Evans fare. It was something we all looked forward to, and we had a fun time trying to outdo each other. What a delicious competition!

I was looking for something fun to make that no one else was bringing, so I came up with my own version of breakfast pizza. I often got up early to make it so I could bring it in fresh to work. My coworkers always asked me when it was my turn! And I always had to make an extra one for my family. Otherwise, they’d never let me leave the house! Continue reading →

Meals & Deals: Week of 6/21/2015

Here are the meals I’ve got planned, along with my shopping trip. It’s a less ambitious plan than my last one. I made a lot of the recipes last week, but there were a few that I forgot about. I’ll save them for later, since they’d been rescheduled a couple of times. If they don’t show up on my radar, I must not be that excited to actually make them. That’s ok. Ideas and reality are rarely the same. I’ve found staying flexible helps. I did manage to get quite a few recipes posted online, which I was happy about. I’m still adding as many as I can every week, on top of everything else. Slowly but surely!

Cheap Thrills @ Goodwill Part 2

Houston, we have a problem….

After finding my great deals yesterday, I had to sleep with the fact that there was an amazing array of Fiesta-ware still sitting on the shelf in Goodwill, calling out to me. “Kim, buy us! Take us home!”

So I found myself back today. Somehow my car drove there all by itself….
